Ingredients

  • Ingredients:
  • Mutton – ⅓ KG
  • Onion – 1 Big size
  • Whole Garam Masala
  • Oil – 1 Tbsp
  • Ginger Garlic Paste – 2 Tbsp
  • Red Chilli Powder – 1 Tsp
  • Turmeric Powder – 1 Tsp
  • Coriander Powder – 1 Tsp
  • Salt – To Taste
  • Yoghurt – ½ cup
  • Tomato cubes – ½ cup
  • water – 200 ml
  • Garam masala powder – 1 Tsp
  • green peppers – 2
  • Garam masala for Rice
  • Cumin seeds – 1 Tsp
  • Cinnamon – 2 inches stick
  • Bay leaves – 3
  • Rice – 2 Cups
  • Fresh coriander – few leaves
  • Yellow food color – 1 pinch
  • Milk – 50 ml
  • lemon – 1 Tsp

Instructions

  • Method:
  • Preparation of Mutton Curry: Cut onion into thin slices.
  • In a pan, add oil and heat it up.
  • Add whole garam masala in oil.
  • Also, add onion slices and make it brown.
  • As onion get brown take it out on kitchen pepper.
  • In hot oil, add ginger garlic paste, red chilli powder, turmeric, coriander powder and salt.
  • Saute for few minutes until the curry formed.
  • As oil come over the surface add mutton and stir again for fa ew minutes.
  • Make a paste of yoghurt and brown onion and add in curry.
  • Stir curry for 2 minutes and add tomato cubes.
  • Mix well on high heat and add 200 ml water.
  • Sprinkle garam masala.
  • Stir and cover for 45 minutes to tender the mutton.
  • After 45 minutes the biryani curry will be ready.
  • In the mean while, prepare biryani rice.
  • Preparation of biryani Rice: In a spacious pan, add 500 ml water and add whole garam masala and cover for 10 minutes to make the water steamy and aromatic with gram masala flavor.
  • Add rice in hot water and cook until it cook 80%.
  • Drain water from rice and start layering process.
  • Biryani Layering: Over the mutton curry, make a layer of rice and adjust salt.
  • Add some fresh coriander leaves in rice.
  • Also, add yellow food color mixed with milk. Pour the yellow milk over the biryani rice.
  • Squeeze half lemon over the rice and cover for ‘Dum’ for 15 minutes.
  • Initially keep on high temperature for 4 minutes then turn the heat to low to form a proper ‘Dum’.
  • Now mutton biryani is ready to serve!!Best option to serve with biryani raita and enjoy!
