Ingredients

  • Boiled Rice – 2 ½ Cup
  • Half Cup – Cabbage
  • Half Cup – Capsicum
  • Carrots – Half Cup
  • Green Chilies – 3 Chopped
  • Eggs – 2
  • Garlic – 1 teaspoon Grated
  • Vinegar
  • Soya Sauce
  • Black Pepper
  • Salt
  • Cooking oil – 1 Tbsp

Instructions

  • Method
  • Soaked rice for half an hour.
  • After half an hour boil the rice.
  • Drain water and keep the rice on the side.
  • For best result, keep rice for 2 hours before making fried rice.
  • In a bowl, beat 2 eggs.
  • Add salt and black pepper in beaten eggs.
  • In a pan add oil to make scrambled eggs.
  • Add egg in oil and cook for few seconds on medium heat then scrambled using spoon/spatula.
  • Take it out and keep on the side.
  • Now in the same pan, add oil and saute grated garlic.
  • Then add cabbage and saute with garlic.
  • Now add carrots, capsicum and green chillies.
  • Add salt, black pepper and dark soya sauce.
  • Saute for a few minutes and then add boiled rice.
  • Add salt and mix well on high heat.
  • Now add fried scrambled eggs in rice.
  • And now cover and cook on low heat for a few minutes.

Notes

For best result, Boil rice before 2 hours of making fried rice.
