Kashmiri Pink Tea (Noon Chai)

Kashmiri pink tea is prepared with authentic Kashmiri tea leaves and a pinch of baking soda that makes a perfect tea for a cozy winter evening. It's a creamy, milky, flowery, little salty, and nutty flavored tea also famous as noon chai or pink tea. Here is a simple and easy recipe to make at home.

Ingredients

  • 2.5 teaspoon Kashmiri Chai (green tea leaves)
  • 3 cups Water
  • 2 cups Milk
  • 3 pinches Salt
  • 3 pinches Baking Soda
  • 2 Green Cardamom
  • 3 Cloves
  • 1 inch Cinnamon
  • Almond + Pistachio (For garnish)

Instructions

  • In tea pan, add 3 tablespoon of water and as it starts boiling.
  • Add 2.5 teaspoon of green Kashmiri tea.
  • Cook it about 10 minutes on low medium heat.
  • After 10 minutes, add 3 pinches of baking soda.
  • Add 3 pinches of salt.
  • Also add cinnamon 1(1 inch), green cardamom (2) cloves (3).
  • Give it a good mix.
  • Cover and cook for about 40 minutes to make it a concentrated mixture.
  • After 40 minutes, turn off the stove and add ice cube water.
  • Strain the tea.
  • Now you can store the tea for 1 week in the fridge to make Kashmiri tea with milk.
  • Now in a tea pan, heat up the 2 Cups of milk.
  • As the milk started to boil, you can add the Kashmiri tea kehwa around 1 Cup. You can add more kehwa as per your pink color requirements.
  • Add crushed almonds and pistachios to enhance the flavor.
  • Now cook it for about 5 minutes and serve!

Notes

  1. The pink color comes up when you add Kashmiri tea powder in hot boiling water. So monitor the quantity to get desired pink color.
  2. A pinch of Baking soda (soda bicarbonate) will help to get the perfect pink color. So don't skip it.
  3. After adding soda, it will overflow so make sure to use a big tea utensil.
  4. Always add chilled water to hot Kashmiri kehwa. This step will give you a perfect pinkish color.
