Take 2 big potatoes and soak it in 1 pinch of salt for min 30 mins.
Drain the water and keep it aside.
In a pan, add 1 tbsp of oil
Add cumin seeds, green chilies, and sliced onion in pan.
Cook onion until it changes the color to light pink.
Add spices, 1 tsp of red chili powder, 1 tsp turmeric powder and salt according to taste.
As the tomatoes starting blend then add diced cutting tomatoes and cooking for about 2 mins.
Add 150 ml of water
Cover it and cook for 20 mins.
As the potatoes become soft then add 2 beaten eggs in a pan and stir immediately with quick hands.
Cover again, and cook it for about 3 mins.
Now your anday aloo bhujia is ready to serve.
Garnish it with fresh coriander and green chilies.
