Ingredients

  • To Fry Nuts:
  • Clarified butter (Ghe– 1 Tsp
  • Pistachio – ½ Tbsp
  • Cashews – ½ Tbsp
  • Almonds – ½ Tbsp
  • Black Raisins – 1 Tsp
  • Brown Raisin – 1 Tsp
  • Dates Slices – 2 Tsp
  • To Fry Vermicelli
  • Clarified butter (Ghe– 1 Tsp
  • Vermicelli – 1.5 Tbsp
  • To Prepare Milk:
  • Clarified butter (Ghe– 1 Tsp
  • Green Cardamom – 6
  • Milk – 500 ml
  • Sugar – 1 Tbsp
  • Saffron Milk – ½ Cup

Instructions

  • In a pan, add ghee and fry all the nuts (Pistachios, almonds, cashews, raisins, dateon low heat to make it crunchy and fried in taste.
  • Take it out and move on to the next step to fry vermicelli.
  • Before fry, break the vermicelli in a small part.
  • Now again add ghee in a pan and fry vermicelli on low heat to roasted flavor in vermicelli (Seviyan).
  • Take it out and move on to the next step to prepare milk.
  • Again add ghee in a pan, and add milk in the pan. Cook milk on medium heat until it started to get thick.
  • Now add sugar and saffron milk (Boil milk with saffron petals by adding few drops of rose water).
  • Now add fried seviyan/vermicelli and mix well.
  • Stir for few minutes until it shows semi-thick texture.
  • Make sure to stir the milk continuously otherwise it will stick on pan and leave a burning odor in milk that we don’t want.
  • Now add fried nuts and give it a good mix.
  • Cover the pan for 5 to 6 minutes to get ready.
  • After 6 minutes, vermicelli will be soft and chewy and give a great taste with thick milk.
  • Serve and garnish with roasted nuts.

Notes

  • Use good quality vermicelli to make sheer khurma.
  • Roasted vermicelli brings good taste.
  • Use full-fat milk. Shake it before use.
  • Roast the nut before adding in sheer khurma.
  • Adjust consistency as per your taste.
