In a pan, add ghee and fry all the nuts (Pistachios, almonds, cashews, raisins, dateon low heat to make it crunchy and fried in taste.
Take it out and move on to the next step to fry vermicelli.
Before fry, break the vermicelli in a small part.
Now again add ghee in a pan and fry vermicelli on low heat to roasted flavor in vermicelli (Seviyan).
Take it out and move on to the next step to prepare milk.
Again add ghee in a pan, and add milk in the pan. Cook milk on medium heat until it started to get thick.
Now add sugar and saffron milk (Boil milk with saffron petals by adding few drops of rose water).
Now add fried seviyan/vermicelli and mix well.
Stir for few minutes until it shows semi-thick texture.
Make sure to stir the milk continuously otherwise it will stick on pan and leave a burning odor in milk that we don’t want.
Now add fried nuts and give it a good mix.
Cover the pan for 5 to 6 minutes to get ready.
After 6 minutes, vermicelli will be soft and chewy and give a great taste with thick milk.
Serve and garnish with roasted nuts.
