In a pan, add oil and heat it up.
Now add grated garlic, green chillis, and red chilli powder.
Saute for a few seconds.
Then add onion, carrot, and capsicum.
Season with salt and black pepper.
Now add cheddar cheese and mix well again.
Keep it on the side and cool it down.
In the meanwhile, take bread slices.
Spread chilli garlic tomato sauce on toast.
Place veg stuffing over the toast.
Now sprinkle mozzarella cheese to cover the toast.
In a pan, brush butter.
Place bread slices on pan and toast on low heat.
Cover the pan for 5 minutes so the cheese get melt.
Make sure the heat is low otherwise the toast will toast dark from the bottom.
After 5 minutes, remove toast and cut diagonally.
Veg chilli cheese toast is ready to serve.
