Preparation of Garam Masala: In a pan, roast the whole spices (Cumin Seeds, cloves, green cardamom, bay leaves, black pepper, coriander, mace, black cardamom, cinnamon, nutmeg, aniseed) until it gets aromatic. (Don’t over toast the spices).
In a grinder, grind all the spices to make a fine powder.
Preparation of Biryani Masala (1 KG biryani)
In a bowl, add garam masala powder, red chili powder, garlic powder, ginger powder, salt, black salt, and mango powder.
Mix well to combine all the ingredients.
