Ingredients

  • Chicken – 700 gms
  • Cumin Seeds – ½ Tsp
  • Coriander Seeds – ½ Tsp
  • Fennels – ⅓ Tsp
  • Whole red Peppers – 5
  • Salt – ½ Tsp
  • Red Chili Powder – 1 Tsp
  • Turmeric Powder – ½ Tsp
  • Garam Masala Powder – ½ Tsp
  • Mango Powder – ½ Tsp
  • Black Pepper Powder – ½ Tsp
  • Cumin Powder – ½ tsp
  • Ginger garlic paste – 1 Tsp
  • Yogurt – 1 Cup
  • Yellow food color – 2 Pinches optional
  • Aluminum foil

Instructions

  • Preparation of Chicken Marination: In a frying pan, add Cumin, Coriander Seeds, fennels, and whole red pepper.
  • Roast on low heat until get aromatic.
  • Grind to make a fine powder.
  • Now add this masala to a bowl
  • Also add salt, red chili powder, turmeric, garam masala, mango powder, black pepper and cumin powder.
  • Mix well.
  • Now add yogurt and ginger garlic paste and make a smooth paste.
  • Sprinkle yellow food color. (This step is optional just to give specific symbolic yellow color to chicken)
  • Add chicken in the paste and mix well to fully coat the chicken on all sides.
  • Marinate for an hour and keep the marinated bowl in a warm place.
  • After 01 hour of marination, wrap the chicken in Aluminum foil.
  • Preparation of Homemade Steamer:
  • On the stovetop, heat a big pan with ⅓ filled water.
  • Add any stand to maintain distance between pan surface and chicken.
  • Kept a stainer over the stand.
  • Steam the chicken: Place the chicken in a strainer.
  • Turn the heat to full until the water starts to boil.
  • Now cover the pan and cook for 30 minutes.
  • You can add more water to the pan if requires.
  • After 30 minutes, carefully remove the chicken from the foil.
  • Roast Chicken: Place the chicken on an Aluminum pan and keep it over the skillet (Tawa).
  • Heat up the skillet (Tawa).
  • Now cook the chicken for 5 to 6 minutes depending on your chicken moisture. This step is to give roasted color to the chicken and evaporate excess water.
  • Cook until the chicken shows roasted texture and changed the color.
  • Tasty and delicious Roasted “Steam Chicken” is ready to serve.

  • Don't' over steam the chicken.
  • Carefully take out chicken from foil.
  • To roast the chicken, you can also use an oven.
  • To evenly roast chicken on the stovetop, use Aluminum dish/pan
