Easy Chicken and Yellow Rice (One Pot) | Video

Chicken and yellow rice are the best one pot recipe for family dinner. Yes, I am not kidding! Soft and tender chicken cooked with rice on the stovetop with the flavor of turmeric is so aromatic, colorful, and tempting to eat.

Ingredients

  • 500 g Chicken
  • 2 cups Rice
  • 1 tbsp Oil
  • 1 tsp Grated Garlic
  • tsp Turmeric
  • 1 tbsp Freshly squeezed lemon juice
  • Homemade Spice Powder:
  • 1 tsp Paprika
  • 1 tsp Coriander Powder
  • ½ tsp Garlic Powder
  • ½ tsp Garam masala powder
  • ½ tsp turmeric powder
  • ½ tsp cumin powder
  • ½ tsp Salt

Instructions

  • In a bowl, add paprika, coriander powder, garam masala, garlic powder, turmeric powder, cumin powder and salt.
  • Mix well to combine the spices.
  • Sprinkle the sesaoining spices over chicken. Rub the spices with hand to give it a good coat.
  • In the meanwhile, soak the rice for 30 minutes.
  • Now in a heated pan, pour oil and fry the chicken pieces until turned to golden in color.
  • As the chicken turned to golden, take it out!.
  • In same oil, add grated garlic and saute for few seconds.
  • Add turmeric powder and give it a quick stir.
  • Now add soaked rice and mix well in pan.
  • Add 2 cups of water and gently mix well.
  • Add the fried chicken at the top of rice.
  • Now cook and cover the rice for 20 minutes. Initially cook on high heat for 5 to 6 minutes. Then turn the heat to medium/low to cook the rest of the rice on steam.
  • After 20 minutes, the rice will be ready to serve!

Notes

  • To get fluffy and soft rice, it's recommended to soak the rice before 30 minutes of cooking.
  • Pan-fried chicken is tastier and creates a soft and juicy texture with rice. Fry chicken for at least 3 to 4 minutes from each side to seal the pores. 
  • Saffron and turmeric are normally used to add a yellow color to the rice. Avoid using yellow food color.
  • Never cook the rice for too long. 30 minutes soaked basmati rice cooking time is 20 to 25 minutes.
  • Always take out rice from the sides. Never run the spoon from the middle after rice cooking otherwise the rice will break. 
  • Gently run the spoon from the sides to the middle to mix all rice. In this way, the rice will not clutter.
