Ingredients

For Chicken Stuffing

  • 3 teaspoon Oil/Butter Use butter or oil or used as a combination for rich flavor
  • teaspoon Garlic Finely chopped or crushed for a light garlicky aroma
  • cup Boiled Chicken Shredded chicken breast works best for soft, juicy filling.
  • teaspoon Salt
  • teaspoon Black Pepper
  • 1 tablespoon Capsicum
  • 1 tablespoon Carrot
  • 100 ml Milk
  • 2 tablespoon Mayo

For Omelette Layer

  • 2 Eggs Whisked until fluffy
  • 2 pinches Salt
  • 2 pinches Black Pepper
  • 2 teaspoon Butter For frying the omelette with a golden touch
  • 1 Sandwich Cheese Use sliced cheese for a melty layer
  • 4 Cucumber slices
  • Bread Slices (large) Use white, brown, or whole wheat bread 

Instructions

Prepare Chicken Stuffing

  • Heat oil in a pan and sauté garlic until fragrant.
  • Add shredded boiled chicken, season with salt and black pepper, and sauté for a few seconds.
  • Add chopped capsicum and carrot, then stir on medium heat.
  • Pour in milk and mix well until it’s absorbed into the chicken and veggies
    Turn off the heat and allow the mixture to cool slightly.
  • Add mayonnaise and mix until creamy.Season with salt and black pepper and saute for few seconds.
    [Tip]: Cooling before adding mayo prevents curdling and keeps the filling smooth and rich.

Prepare Omelette

  • In a bowl, whisk eggs with salt and black pepper.
  • Pour the egg mixture and cook a soft, golden omelette.
  • Once done, set aside to cool slightly before layering.

Toast Bread Slices

  • Trim the edges of bread slices for neat layers.
  • Lightly toast both sides in a pan or toaster until golden and crisp.
    [Tip]:  Buttering before toasting gives that authentic café-style aroma and crisp texture.

Assemble the Club Sandwich

  • First Layer: Place one toasted slice on a plate. Spread a thin layer of mayonnaise and top with cucumber slices.
  • Second Layer: Add another bread slice, spread the chicken-mayo stuffing evenly.
  • Third Layer: Add a slice of omelette over the chicken layer.
  • Fourth Layer: Place another bread slice and top with a layer of sandwich cheese.
  • Top Layer: Cover with the final slice of bread.
  • Secure the sandwich with toothpicks or skewers to keep layers in place.
  • Lightly toast again for a crisp and golden finish.
  • Cut the sandwich diagonally into triangles
  • Serve with your favorite sandwich sauce, french fries and coleslaw.
