Heat 1 tablespoon oil in a pan and add 1 cup small chicken pieces.
Stir quickly until the chicken starts to change color.Add 1 teaspoon ginger-garlic paste and sauté for 1 minute.
Season with ½ teaspoon salt, ½ teaspoon red chili powder, ½ teaspoon paprika, ½ teaspoon coriander powder, and a pinch of turmeric.
Mix well.Add ⅓ cup thick yogurt and cook until the chicken absorbs the spices and forms a thick coating.
Sprinkle ½ teaspoon homemade garam masala, add a splash of 50 ml water, and cover for 15 minutes.
After cooking, check the consistency—tandoori chicken should be dry. If there’s excess water, cook on high heat to evaporate.
