Coffee Cookies Recipe

Here is a quick and easy coffee cookies recipe with brewed coffee. Prepared with 5 ingredients using brown sugar and without chocolate. Excellent idea to double the joy of your coffee time as it’s extremely crispy from the outside and inside is incredibly chewy.

Ingredients

  • 1 tablespoon Coffee Espresso Powder
  • 2 tablespoon Hot Water
  • ½ Cup Brown Sugar Powdered
  • 1.5 Cups All Purpose Flour
  • 40 g Butter 2.8 tablespoon
  • teaspoon Baking Powder

Instructions

Brewing Coffee

  • In a bowl, add instant coffee or espresso powder with hot boiling water. Give it a good mix and keep on side. It's great to brew coffee in French Press.

Cookie Dough Preparation

  • Now in a deep bowl, add powdered brown sugar and butter. Whisk it with an electrical beater to make it a little foamy in texture.
  • Then add brewed coffee in bowl and whisk it again. Just mix it don’t run the whisk for so long.
  • Now add all purpose flour and baking powder.
  • Mix it well and make a soft dough.
  • Make small balls of cookies and give it a line mark with fork as illustrated in picture.

Baking Cookies

  • Preheat the oven at 175C or 350F before 10 minutes.
  • Now place the parchment paper in a baking tray.
  • Rub the butter on the base of the parchment paper.
  • Place the baking tray in oven and bake for 20 to 25 minutes.
  • Take out baking tray and give 5 minutes to settle the cookies at room temperature.
  • Sprinkle coffee powder on cookies but it’s all optional. Check the tips section to add more value to make best coffee cookies.
  • Serve the cookies with cookie sauce or simply with a homemade cappuccino or karak chai.
  • Don’t overcook otherwise the cookies will change the flavor.

Notes

  • Use the appropriate quantity of all ingredients to make the best coffee cookies.
  • Always make sure the espresso coffee powder is more concentrated than instant coffee.
  • Manage the coffee quantity according to your taste. If you want to make it strong then increase the quantity.
  • Too much coffee can make the cookies bitter in taste. Cookie dough should be soft and firm. If it seems hard, add a splash of hot water to manage the dough’s consistency.
  • Overdose of baking powder can make the cracky look. If the cookie dough seems too soft than add more flour to adjust.
  • Don’t overbake the cookies as it will give a burnt flavor.
