    Here is the quick and easy coffee cookies recipe with espresso brewed coffee. Prepared with 5 ingredients using brown sugar and without chocolate and egg. Excellent idea to double the joy of your coffee time as it’s extremely crispy from the outside and inside is incredibly chewy and delicious.

    In my circle, I hardly find one who doesn't like to have coffee and cookies especially the cafe cookies. In every season, we all have it! Cookies with brewed coffee flavor have a specific taste if you try without chocolate. Here are the few points that made me convince to love this recipe:

    • Super easy to make without creating any mess in kitchen.
    • The distinct flavor of coffee with crispy edges and chewy inside make me crazy to have it with my evening coffee stop.
    • It's portable and easy to eat when you feel low in energy.
    • It helps to invoke alertness due to caffeine factor.
    • My 8-year-old doesn't like to have coffee but loves the coffee flavored cookies. So, it keeps me driven to prepare once a month.
    • These are eggless cookies and purely made with coffee flavor. No chocolate or substitute.

    Coffee: Use instant coffee or espresso powder of any good brand. I love to use espresso as it has a rich and strong flavor of coffee with a mild chocolaty taste that goes well to bake cookies.

    Hot Water: Brew the coffee with hot boiling water to extract the coffee compounds quickly.

    Brown Sugar: Used the powdered version of brown sugar that will help to get a smooth texture of cookies. As it’s dense so it plays a big role to create the cookie shape, color, and texture of cookies after baking. The substitute for brown sugar is white powdered sugar.

    Butter: Used unsalted butter that will add lubrication to cookies and also help to make soft cookie dough and make the cookies more tender and firm after baking.

    Flour: Used all purpose flour which contains protein and gluten that will help to add elasticity to cookie dough to get desired tenderness.

    Baking Powder: It will help to make the cookies chewy from the inside. It works as a catalyst to break the gluten in the flour to make it rise. Use in small quantities to avoid cracks in cookies.

    How To Make Coffee Cookies

    Brew The Coffee

    In a bowl, add instant coffee or espresso powder with hot boiling water. Give it a good mix and keep on side. It's great to brew coffee in French Press.

    Prepare Coffee Cookie Dough

    Now in a deep bowl, add powdered brown sugar and butter. Whisk it with an electrical beater to make it a little foamy in texture.

    Then add brewed coffee in bowl and whisk it again. Just mix it don’t run the whisk for so long.

    Now add all purpose flour and baking powder.

    Mix it well and make a soft dough.

    Make small balls of cookies and give it a line mark with fork as illustrated in picture.

    Preheat the oven at 175C or 350F before 10 minutes.

    Now place the parchment paper in a baking tray.

    Rub the butter on the base of the parchment paper.

    Place the baking tray in oven and bake for 20 to 25 minutes.

    Take out baking tray and give 5 minutes to settle the cookies at room temperature.

    Sprinkle coffee powder on cookies but it’s all optional. Check the tips section to add more value to make best coffee cookies.

    • Use the appropriate quantity of all ingredients to make the best coffee cookies. Always make sure the espresso coffee powder is more concentrated than instant coffee.
    • Manage the coffee quantity according to your taste. If you want to make it strong then increase the quantity. Too much coffee can make the cookies bitter in taste.
    • Cookie dough should be soft and firm. If it seems hard, add a splash of hot water to manage the dough’s consistency.
    • Overdose of baking powder can make the cracky look.
    • If the cookie dough seems too soft then add more flour to adjust.
    • Don’t overbake the cookies as it will give a burnt flavor.

    This is best for chocolate and coffee lovers to add chocolate chips in cookie dough. You can also drizzle Nutella on baked cookies. If the coffee flavor is too strong than neutralize with powdered sugar. Sprinkle powdered sugar on baked cookies.
