Coffee: Use instant coffee or espresso powder of any good brand. I love to use espresso as it has a rich and strong flavor of coffee with a mild chocolaty taste that goes well to bake cookies.
Hot Water: Brew the coffee with hot boiling water to extract the coffee compounds quickly.
Brown Sugar: Used the powdered version of brown sugar that will help to get a smooth texture of cookies. As it’s dense so it plays a big role to create the cookie shape, color, and texture of cookies after baking. The substitute for brown sugar is white powdered sugar.
Butter: Used unsalted butter that will add lubrication to cookies and also help to make soft cookie dough and make the cookies more tender and firm after baking.
Flour: Used all purpose flour which contains protein and gluten that will help to add elasticity to cookie dough to get desired tenderness.

How To Make Coffee Cookies
Brew The Coffee
In a bowl, add instant coffee or espresso powder with hot boiling water. Give it a good mix and keep on side. It's great to brew coffee in French Press.
Prepare Coffee Cookie Dough
Now in a deep bowl, add powdered brown sugar and butter. Whisk it with an electrical beater to make it a little foamy in texture.
Then add brewed coffee in bowl and whisk it again. Just mix it don’t run the whisk for so long.
Now add all purpose flour and baking powder.
Mix it well and make a soft dough.
Make small balls of cookies and give it a line mark with fork as illustrated in picture.
Preheat the oven at 175C or 350F before 10 minutes.
Now place the parchment paper in a baking tray.
Rub the butter on the base of the parchment paper.
Place the baking tray in oven and bake for 20 to 25 minutes.
Take out baking tray and give 5 minutes to settle the cookies at room temperature.
