Instructions

Al Dente Spaghetti

  • Fill a large pot or pan with water and heat it until it reaches a boil.
  • Add some salt and stir it well. Once the water is boiling hot, add the spaghetti pasta. Cook it al dente for 8 minutes over high heat. As the pasta softens, use a spoon to stir it to prevent it from sticking together.
  • After 8 minutes, check the pasta and carefully drain the water. Rinse the pasta under tap water to remove the starch.

  • As the onions begin to change color, sprinkle in some salt and chili flakes, and mix everything well.
  • Next, incorporate the freshly blended tomato paste and stir it thoroughly.
  • Continue to stir and cook on low heat until the mixture starts to thicken into a sauce.
  • Once the sauce has thickened, add sugar and mix it well to ensure all the ingredients are combined. Now, your arrabbiata sauce is ready to be served with pasta.

  • Combine boiled spaghetti with pasta sauce and stir it well over high heat. Continue to mix until the sauce is fully incorporated with the spaghetti.
  • Top it off with parmesan cheese and chopped parsley. Your pasta in arrabbiata sauce is now ready to be served.

Notes

Quick Tips:
  • Cook spaghetti until al dente in boiling water for 8 minutes.
  • Ensure it is neither chalky nor hard before mixing in the sauce.
  • Overcooked pasta (stracotto) will have a mushy texture, so keep a close eye on the cooking time.
  • Always opt for pulpy tomatoes when preparing arrabbiata sauce. Be sure to remove the tomato skin before blending.
  • Simmer the sauce on a low flame to achieve a thick, smooth, and consistent texture.
