What is Gud Patti?
People from South Asian countries especially Indian and Pakistani love to have this brittle chikki (gud patti or gajak), especially during the winter season. It's not wrong if I call it the best winter recipe. Sesame is a nutritious and healthy ingredient so incorporating til patti in your kid's diet during the winter season can keep them warm. Best for kid's lunch box!
When I was a kid, I remember used to have this chikki at home. Sometimes I had taken from peanut hawkers and sometimes Ammi made it at home in a big container. A big tray, full of chikki still lives in my memories. Now I make it for my son as he likes it even though it's available in a grocery store but still, I love to make it at home.
Is it Vegan?
If you replace ghee with oil then it's vegan. So if you are looking for vegan chikki then try with oil. You can use sunflower, coconut, sesame, or any avocado oil to make this sweet chikki. Are confused with jaggery? It's a plant-based sweetener so don't worry. Jaggery is vegan and you can have it as a regular sweet replacement.
Health Benefits
Gud patti or sesame chikki seems like sweet candy but believe me, it's extremely healthy for mental health. Sesame and Jaggery are full of antioxidants and helps to reduce anxiety and stress. It also helps to increase energy levels so if you have after or pre-workout then it's good. Many people use chocolate so this one is the substitute. Also, good for women to fight premenstrual syndrome.
Ingredients
You know the easy thing is that it's a real 3 ingredient recipe. You only need:
- Clarified butter (ghee) will help to make perfect luscious chikki.
- Jaggery (gud), used dark brown as it's free from chemicals. Yellow jaggery is prepared by adding chemicals.
- Sesame (til): used unroasted white sesame seeds.
How To Make Gud Patti
Roast the Sesame (Til) in a pan on low heat for about 2 minutes. As it gets aromatic take it out and keeps it on side.
Now add 3 teaspoon Ghee (clarified butter) in a pan and melt it on low heat. As it gets melted add 1 Cup of Jaggery and stir until it melts and changes color.
Add Sesame (Til ) in melted Jaggery (Gur) and fold the mixture to bind together.
Grease a tray and pour the hot jaggery (Gur) and sesame (til) mixture on a tray.
Let it sit for about 5 minutes.
After 5 minutes, cut the "Til Patti" into pieces and wait to dry for 5 to 10 minutes.

Easy Tips
- Temperature is very important to make good gud patti. If it's low or high then it can burn or the taste will be different.
- Roast the sesame at low heat until it becomes aromatic. High heat can burn the sesame seeds.
- As the ghee melts, add jaggery at low temperature and let it melt down for few minutes. Stir the pan in the overall process otherwise the gud may stick to the pan bottom.
- Use an iron or high-heat absorbent utensil to make chikki. Avoid steel or aluminum pan.
- If you don't have jaggery then replace it with sugar. In the same way, replace ghee with oil. Here I want to share that the ghee in patti makes it shinier, and lustrous.
- You can also use jaggery powder if you don't have block/cube jaggery.
- As the chikki cooks, immediately shift it to a greasy tray otherwise it will become hard and will not cut into cubes.
- Never cover hot chikki. As the temperature goes down, you can store it in the container.
How to Store
Yes, it has a shelf life of 3 weeks. You can keep it on your kitchen counter or dining area to easily approach this chikkis. After distributing in blocks, keep it in an air-tight glass mason jar and make sure to fully tighten the lid as air can make it soggy.
