What is Tamarind Chutney?
Tamarind called Imli in a local language. It's a form of sauce that comes with a sweet and tangy and spicy flavor. You can make it in a variety of ways as per your taste. It's a simple chutney that people love to eat in India and Pakistan. It's a gluten-free vegan sauce that you can serve with snacks and different types of chaat.
How To Soft Tamarind (Imli)?
You can simple soak the tamarind (imli) in lukewarm water for 1 hour. After that it will be soft and pulpy. You can now remove the seeds and discard the water to get the thick pulp of tamarind to make chutney.
How Long to Store?
You can refrigerate in an airtight jar for about 15 days. You can keep it for 1 month but recommended to use it before 2 weeks as we are not adding any preservatives.
1) Imli Ki Meethi Chutney
Here is simple and easy imli ki meethi chutney that you can quickly make by adding imli pulp and other spices. It has great taste to serve with pani puri, chana chaat and dahi bhalla. Try samosa with imli ki meethi chutney and you will surely love the taste.
Ingredients:
- Tamarind (Imli) - ½ Cup (املی)
- Salt - ⅓ teaspoon (نمک)
- Black salt (Kala namak) - 1 Pinch (کالا نمک)
- Sugar (china) or Jaggery (gud) - 1.5 teaspoon (چینی | گڑ)
- Dry Ginger powder (saunth) - 2 Pinches (ادرک پاؤڈر)
- Sesame - ½ teaspoon (تل)
Method:
- Soak the tamarind in lukewarm water for 1 hour.
- After 1 hour, strain the water and remove the tamarind seeds.
- Now in a blender, add tamarind.
- Season with salt, sugar or jaggery and red pepper.
- Blend well by adding little water to make a thick paste.
- Sprinkle ginger powder, black salt and sesame seeds.
- Imli ki meethi chutney ready to serve!

املی کو 1 گھنٹے گرم پانی میں بھگو دیں
گھنٹہ کے بعد ، پانی کو چھانیں اور املی کے بیجوں کو نکال دیں۔
اب بلینڈر میں املی ڈال دیں۔
اس میں نمک ، چینی یا گڑ اور کالی مرچ ڈالیں۔
گاڑھا پیسٹ بنانے کے لئے تھوڑا سا پانی ڈال کر اچھی طرح بلینڈ کریں۔
ادرک پاؤڈر اور تل کو چھڑکیں۔
املی کی میٹھی چٹنی تیار ہے
2) Imli Aloo Bukhare Ki Chutney
Ingredients:
- Tamarind (Imli) - ½ Cup
- Plum - 20
- Water - 200 ml
- Salt - ⅓ Tsp
- Black salt (Kala namak) - 1 Pinch
- Sugar (china) or Jaggery (gud) - 1.5 Tsp
- Black Pepper - 2 Pinches
- Sesame - ½ Tsp
Method:
- Soak the tamarind and plum in lukewarm water for 1 hour.
- After 1 hour, strain the water and remove the seeds from tamarind and plums.
- Now in a pan, add water and soaked tamarind and plum.
- Heat up the pan on the stovetop to make a thick paste.
- It will take 5 to 6 minutes to cook and turn to a thick paste.
- Stir continuously.
- As the chutney started to get thick now add salt, black salt, black pepper, sugar or jaggery.
- Mix well.
- Cool it down!
- Sprinkle sesame seeds.
- Taramrind plum chutney is ready to serve.

3) Hari Chutney with Imli
Ingredients:
- Tamarind - ½ Cup (املی)
- Fresh Coriander - 1 Cup (ہرا دھنیا)
- Mint - 1 Cup (پودینہ)
- Garlic Paste - 1 teaspoon (لہسن کا پیسٹ)
- Cumin - ⅓ teaspoon (سفید زیرہ)
- Green Chilies - 4 (ہری مرچ)
- Salt - ½ teaspoon (نمک)
- Black Salt - 1 Pinch (کالا نمک)
Method:
- In a blend add soaked and deseeded tamarind.
- Also add fresh coriander, mint, garlic paste, cumin, green chilies, salt and black salt.
- Add little water.
- Blend well.
- Take out and serve
