    What is Rajma Salad?

    It's a 5 minutes Rajma salad (Indian style) globally famous as Red Kidney Bean Salad. Prepared with boiled rajma with the addition of tomatoes, onions, an Indian herbs, and spices. Blended with a yogurt dip that makes it more tasty and scrumptious. Best for lunch!

    Red kidney beans (Rajma, Laal Lobia) are one of the best sources of carbs, protein, and fiber. It also helps to control blood sugar, is anti-cholesterol, is good for diabetic patients, contains antioxidants, boosts energy and improves memory also helps to release stress. It also has anti-aging properties that keep you healthy with young looks. So incorporate kidney beans in your diet and stay happy and healthy

    Which Kidney Beans are Healthy? Light or Dark

    Basically, all kidney beans are healthy and packed with vitamins but the light red beans have more calcium, iron, and folic acid as compare to dark red kidney beans.

    Precautions of Eating Red Kidney Beans

    Many people think that kidney beans are not healthy for eating which is wrong. It is healthy to eat but you have to be careful while cooking. It should be soaked and cooked properly to get rid of toxins. Avoid eating before going to bed. but it's ok to eat 3 hours before sleeping. You can also eat 3 to 5 times a week. Avoid if you have tummy or digestion issues.

    How to Boil Kidney Beans

    Proper cooking of red beans is important for your health so make sure to follow the steps.

    1. Soak the kidney beans (rajma) for 5 to 6 hours. (Soaking is a process to keep beans in water for a long time)
    2. After soaking, rinse and wash with tap water.
    3. Now place in a deep pan and fill with water. If you are taking 2 Cups beans then add 4 cup water to boil properly.
    4. For 500 gms soaked rajma: add salt (1 heap Tsp) and baking soda. (⅓ Tsp)
    5. Cover for 45 minutes on low medium heat. (If you are boiling in pressure cooker then check after 30 minutes).
    6. Check the softness otherwise give it more time to get soft and tender.

    Can I Use Canned Kidney Beans?

    Yes, you can use but fresh is more recommended as compared to canned. But if you are using canned beans then simply wash it and keep it in a pan. Add some water and boil it for few minutes then add little oil and mix it well. Now you can follow the same procedure to make the salad.

    Ingredients

    • Red Kidney beans - 2 Cups (boiled)
    • Onion (thinly sliced) - 1 Tbsp
    • Tomatoes (Chopped) - 1 Medium Size
    • Green Chilies - 1 (Chopped)
    • Lemon Juice - 1 Tbsp
    • Low-fat Yogurt - 2 Tsp
    • Salt - To Taste
    • Red Chilli Powder - 1 Tsp
    • Chaat Masala - 1 Tsp
    • Potatoes - 1 (diced)
    • Fresh Coriander - Few leaves (Chopped)

    How to Make Rajma Salad

    1. Soak the beans (2 Cups) for 5 to 6 hours.
    2. After 6 hours, rinse and wash properly.
    3. Shift the rajma in the pan and add half-filled water in pan.
    4. Now add salt (to taste) and baking soda (½ Tsp).
    5. Cover and cook properly for 45 minutes in a regular pan.
    6. Start making Salad: In a bowl, add kidney beans (rajma).
    7. Now add thinly sliced onion,
    8. Also, add diced tomatoes (peel the skin and remove seed)
    9. Now add lemon juice and green chilies.
    10. Add salt, red chili powder, and chaat masala.
    11. Now add yogurt just to add a creamy look.
    12. Sprinkle freshly chopped coriander.
    13. Now mix all the ingredients and serve!

    You can store this salad in the refrigerator for 2 days in an airtight glass container. Avoid freezing! If you feel the salad is looking hard or jammed while eating then add fresh yogurt and mix well. It will be ready like a fresh salad.
