My mother used to make this quick "Suji Halwa" on a daily basis because Semolina (Suji) is nutritious and healthy for growing kids. Suji ka halwa is the quickest dessert or Pakistani and Indian sweet dish that people make with roasted semolina (sooji/rava), ghee, sugar, milk (water) or nuts.
Here I am sharing the simple, easy and traditional way to make suji halwa that I learnt from my mother. Some people used to make this with water and some used milk. All depends on your choices. If you use milk then it will be creamy and milky in taste and prepared with water will give you perfect roasted semolina taste. So both versions are irresistible and tasty.
Another way is to make the semolina halva in different colors like some people make it orange using edible food color. Another option is kesari (zafrani) suji halwa using few strands of saffron. Here, in this recipe I didn't use any color so you get perfect roasted semolina color. Semolina (Suji) - 1 Cup
Clarified Butter/Ghee - 1 Tbsp
Green Cardamom Seeds - 20
Sugar - ½ Cup
Desiccated Coconut (optional) - ⅓ Cup
Milk - 1.5 Cups
Dry fruits: Raisins & Almonds
How to Make Suji Ka Halwa
- In a pan, add clarified butter/ghee and heat it up a bit.
- Add green cardamom seeds to pop up on low temperature.
- Then add Semolina (suji) and roast it in ghee until it gets aromatic.
- As the Semolina starts roasting, add sugar to caramelise with it.
- Keep stirring the pan otherwise, semolina (Suji) will burn as the suji burning process is quite high.
- In the next step, add desiccated coconut and stir for few seconds.
- Add Milk in the pan and quickly stir to blend all ingredients together to form a halwa.
- Stir the pan for 2 to 3 minutes on low medium heat.
- As the halwa starts rolling up then place it on a platter to serve.
- Garnish with Almonds and other dry fruit that you like.
