About Tahari
Tahari is special yellow rice cooked with potatoes or meat. It's the most popular recipe for lunch in Pakistan and India. Local people also call it Tehri, Tehari, Aloo walay chawal or simply Aloo ki Tahari.
It's a simple and easy recipe that anyone can quickly prepare using a handful of ingredients from the pantry. Potatoes create a special taste and aroma with rice that makes a perfect combination to serve for dinner or lunch.
People make it in different ways according to their region and taste. Some people like it in white color as they don't add turmeric powder in it and some are obsessed with the yellow color of the rice that makes it distinguished among other rice recipes of Indian food.
Pakistani aloo ki tahari prepared with starchy potatoes and basmati rice. It's a form of veg pulao that you can serve with kabab and raita.
Hyderabadi tahari is also famous due to its special taste and aroma. In the same way, Bengali tahari is famous to cook with meat.
All recipes of tahari are more or less the same with few variations in cooking methods and techniques that make a big difference.

Ingredients
Oil - 1 tablespoon (Vegetable Oil) | Cumin seeds - 1 teaspoon | Onion - 1 (Sliced) | Green chilies: 2-3 | Red Chili Powder - 1 teaspoon | Turmeric - 1 teaspoon | Tomatoes - 1 Chopped | Potatoes - 1 (diced cutting) | Water - 2 Cups | Rice - 2 Cups
How to Make
- Add 1 tablespoon oil in a pan
- Now add Cumin seeds and start frying it
- Add sliced onion and chopped green chilies
- As onion changes the color to light pink add spices
- Add red chili powder, turmeric powder and salt to taste
- As the masala cooked and oil comes over the surface then add tomatoes
- Make a blended gravy by using little water
- Add Potatoes and stir for about 2 mins
- Add 2.5 Cup water in the pan and as it started boiling cover it for about 15 mins.
- After 15 mins, check potatoes and add rice.
- Cover the pan and cook it for about 15 mins.
Now your Tahari masala rice is ready to serve!
You may have this rice with 'Raita', green salad or if you want something more then add a chicken curry or masala with this. It's the best combination and believes me you will love it <3.

Serving Suggestions
Tahari is a special rice recipe with potatoes that you can serve as the main course or as a side dish.
Serving At Lunch: I personally love to serve tahari with Shami kabab, green chutney, and veg salad.
Serving At Dinner: The best combination comes up with Chicken curry or keema as it makes a perfect meal. Also, add raita and kachumar salad to add more flavor.

Notes
- Turmeric is the main ingredient to create significant yellow color in Tahari. Don't use yellow food color or any substitute.
- Use basmati or jasmine rice to get the best result.
- Monitor the quantity of water while cooking rice.
- Don't cook the rice for too long.
- Use starchy potatoes to get the perfect flavor of potatoes in tahari.
