Yes I know, you must be wondering how the biryani and pulao can cooked together. As we all know pulao cooked with rice on steam and biryani prepare with layering the curry with rice and both are different in taste.
So, what's special in this recipe?
In cooking, my inspiration is my mother who loves to try different food. She believes in creativity and applies it in her cooking. She had this recipe somewhere in "dawat" and then tried it at home. Since then, we love eating this, and mostly on Friday, she used to make it. Whenever I go home, my first choice with her to make biryani pulao rice.
I am sharing this recipe in a very simple way. So if you are a beginner or bachelor and looking for an easy way to make biryani then try this. I am sure the result will be awesome.
Basically, it's a fusion recipe that prepares by combining pulao and biryani together.

Ingredients & Substitutions
Chicken (600g) without skin and with bones
Basmati Rice (2 cups) - Preferred to take long grain basmati rice. Substitute is jasmine rice.
Garlic - 4 Cloves
Ginger - 3x3 inches
Green chilies - 2
Yogurt - 2 Tbsp
Brown Onion (2 Tbsp) - crispy fried biryani onions (birista) will add a perfect degi flavor.
Oil (2 Tbsp) Vegetable or canola is best for cooking. Olive oil will change the biryani taste.
Whole Garam Masala:
Bay Leaves - 1,
Cloves - 6,
Green Cardamom - 5
Cumin Seeds - 1 Tsp,
Cinnamon Stick 3x3"
Spices: Red Chilli Powder - 1 Tsp, Salt - 2 Tsp, Garam Masala Powder - 1 Tsp, Coriander Seeds - 2 Tsp, Fennel Seeds - 2 Tsp
Water - 500 ml
Biryani Color (1 Pinch) edible version of yellow/orange food color
Brown Onion for Topping
How to Make Pulao Biryani
- In a bowl, add garlic, ginger, green chilies, yogurt and brown onion.
- Make a thick paste of all ingredients in the blender.
- Now in a pan, add oil and heat it up.
- As the oil gets heated add whole garam masala and pops it up until it gets aromatic.
- Now add Chicken and cook on high heat until it changes color.
- Add blended yogurt paste and cook on high heat.
- Also, add red chili powder and salt.
- Make powder of coriander seeds and fennel.
- Add powder in curry.
- Stir fry the pulao curry for a few minutes.
- Now add garam masala powder and add water.
- Cover for 30 minutes on medium heat to tender the chicken.
- In the meanwhile, wash rice and soak for 15 minutes.
- After 30 minutes, add rice.
- Also, add salt.
- Gently stir the rice in one dimension.
- Cover and Cook For 15 Minutes
- First, 5 Minutes on High Heat For 7 Minutes.
- After 7 Mins, Turn Heat to low To Bring Dum (Steam).
- After 15 minutes, sprinkle a pinch of biryani color.
- Add a topping of brown onion.
- And cover for another 5 minutes to make it aromatic.
- After that, the dish is ready to serve!

Easy Tips
- Brown onion in yogurt paste makes a big difference in this recipe to get the fusion taste of pulao and biryani. Make sure the brown onion is freshly fried and crispy before adding in yogurt. You can also crush the crispy onion with your hands in yogurt.
- When the oil seperates and water evaporates after tendering the chicken then the curry will be ready to add in rice.
- Make sure to soak the rice before 30 minutes. Never soak for long time otherwise it will be mushy in texture.
- To get the best result, use basmati or jasmine rice as it makes a perfect flavor.
- Never steam the rice for too long.
- Right after steaming, avoid to run the spoon in pan. It takes 5 to 10 minutes to get settled.

- 2 Green chilies
- 2 tablespoon Yoghurt
- 2 tablespoon Brown Onion Birista
- 2 tablespoon Oil
- Whole Garam Masala:
- 1 Bay Leave
- 6 Cloves
- 5 Green Cardamom
- 1 teaspoon Cumin Seeds
- 1 stick Cinnamon Stick 3×3″
- 1 teaspoon Red Chilli Powder
- 2 teaspoon Salt
- 1 teaspoon Garam Masala Powder
- 2 teaspoon Coriander Seeds
- 2 teaspoon Fennel Seeds
- 500 ml Water
- 1 pinch Biryani Color Yellow/orange food color
- Brown Onion for Topping
Instructions

- Use crispy fried brown onions (birista) to make curry. If the onion is soggy or showing oil, don't use it as it will change the taste.
- Chicken curry should be perfectly cooked and chicken should be cooked on high heat to get juicy and tender chicken in rice.
- Soak the rice for 30 minutes. A long time soaking can make the rice mushy.
- For the best result, use premium quality basmati rice.
- Steam the rice on low heat and avoid steam for a long time.
