Ingredients
To Fry Nuts:
Clarified butter (Ghee) - 1 Tsp
Pistachio - ½ Tbsp
Cashews - ½ Tbsp
Almonds - ½ Tbsp
Black Raisins - 1 Tsp
Brown Raisin - 1 Tsp
Dates Slices - 2 Tsp
To Fry Vermicelli
Clarified butter (Ghee) - 1 Tsp
Vermicelli - 1.5 Tbsp
To Prepare Milk:
Clarified butter (Ghee) - 1 Tsp
Green Cardamom - 6
Milk - 500 ml
Sugar - 1 Tbsp
Saffron Milk - ½ Cup
How to Make
- In a pan, add ghee and fry all the nuts (Pistachios, almonds, cashews, raisins, dates) on low heat to make it crunchy and fried in taste.
- Take it out and move on to the next step to fry vermicelli.
- Before fry, break the vermicelli in a small part.
- Now again add ghee in a pan and fry vermicelli on low heat to roasted flavor in vermicelli (Seviyan).
- Take it out and move on to the next step to prepare milk.
- Again add ghee in a pan, and add milk in the pan. Cook milk on medium heat until it started to get thick.
- Now add sugar and saffron milk (Boil milk with saffron petals by adding few drops of rose water).
- Now add fried seviyan/vermicelli and mix well.
- Stir for few minutes until it shows semi-thick texture.
- Make sure to stir the milk continuously otherwise it will stick on pan and leave a burning odor in milk that we don't want.
- Now add fried nuts and give it a good mix.
- Cover the pan for 5 to 6 minutes to get ready.
- After 6 minutes, vermicelli will be soft and chewy and give a great taste with thick milk.
- Serve and garnish with roasted nuts.

Reheating
To reuse after taking out from refrigerator, keep it in a pan, add little milk and turn on heat on stove top. Cook until it's shows bubbles.

Full fat cow milk is perfect to make sheer khurma. Cook the milk on medium heat and keep stirring to make a perfect texture of sheer khurma. If you are adding cream the flavor will change. You can also add condensed or rabri milk to add more flavor in sheer khurma.
Which Vermicellies (Sivai) are Best to Make Sheer Khurma at Home?
To make traditional style sheer khurma, use thin roasted vermicellies. Make sure the brand is good and it should not old enough. Smell it before use. If it's old or smelly then don't use it.
How to Make in an Instant Pot
To cook in instant pot, turn your instant pot to Saute mode. As it started to get hot, add clarified butter/ghee. Roast the vermicellies and dry nuts for few seconds until it get aromatic. Take out the roasted nuts and add milk and heat it up until it gets bubbly. Stir the milk to make it rich and creamy in texture. Now add vermicellies and cover with lid. Press PRESSURE COOK. Set the timer for 5 minutes. Once the timer goes off, go for natural pressure release (NPR). Serve by topping roasted dry nuts.
