    Suji Ki Barfi (Rava Barfi)

    What is Suji Ki Barfi

    Barfi is a famous sweet from the Indian subcontinent prepared with milk. Here we are making suji ki barfi or rava barfi which is the same as semolina with milk in a way to binds in a nice cut. Topped with nuts!

    Suji barfi is a quick and easy mithai recipe that you can simply prepare within 10 minutes. If you belong to the South Asian region then you must be looking for this recipe as it's simple and easy to make with a special semolina and coconut flavor.

    Ingredients

    Ghee - 1Tbsp
    Green Cardamom Seeds - 8 seeds
    Rava (Semolina) - 1.5 Cups
    Desiccated Coconut - ⅓ Cup
    Sugar - ½ Cup
    Milk - 1 Cup
    Cinnamon Powder - 1 Pinch
    Yellow Food Color - 1 Pinch
    Almonds - For Garnishing

    How To Make Suji Ki Barfi

    1. In a pan, add ghee (clarified butter) and heat it up.
    2. Add green cardamom seeds and pop it up.
    3. Then add semolina (suji/sooji) and roast on low-medium heat to make it aromatic.
    4. Add desiccated coconut and quickly stir to mix well. (Desiccated coconut burns so fast so be careful on this step).
    5. Add sugar and mix all the ingredients together.
    6. Then add milk and mix well until the semolina/suji shows separation from pan.
    7. Add a pinch of yellow food colour.
    8. In the same way, add a pinch of cinnamon to make it more tasty and aromatic.
    9. Continuously stir the pan until the semolina starts to separate.
    10. Set the burfi in rectangular container or tray
    11. Cut it into the desired shape.
    12. Garnish with almonds and other dry fruit.
    13. Serve!!

    Quick Tips

    • Don't overroast the semolina.
    • Roast semolina on low flame and keep stirring until it becomes aromatic.
    • Food color is optional. If you don't want yellow color then skip the food color.
    • 1.5 cup semolina is enough to make 5 barfi pieces (medium size).
    • Desiccated coconut will add flavor to barfi.
    • Monitor the quantity of sugar syrup to make a perfect barfi cut. If there is less sugar syrup or more then the barfi texture may collapse.
