About Aloo Katli
Aloo ki katli or katliyan an are the potato slices cooked with Indian spices famous as tarkari, aloo sabzi or bhujia. Extremely delicious and super easy to cook.
Potato is the universal vegetable that can cook in a variety of ways. This recipe is the simplest as I took only few ingredients from my pantry to saute the potatoes with tomato sauce and spices. Cook on slow heat to tender the potatoes and believe me it turned out so well to pair up with poori paratha or naan.
My grandma used to make this recipe with mustard oil that makes it more delicious and healthy. If you like the taste of mustard oil or coconut oil then try this recipe with it and you will surely love the taste.

Ingredients
Potato Slices - 2 Cups | Oil - 1 tablespoon | Cumin seeds - 1 teaspoon | Green Chilies - 2-3 | Onion - 1 medium size (Sliced) | Salt - to taste | Red Chili Powder - 1 teaspoon | Turmeric Powder - 1 teaspoon | Tomatoes - 1 Chopped | Water - As required | Black Pepper - ½ teaspoon | Fresh Coriander - For Garnish
How To Make Aloo Katli
- Add 1 tablespoon oil in a pan and heat it up on medium temperature.
- Now add cumin seeds - 1 Tsp. As the cumin started frying then
- Add onion sliced and cook it for 3-4 minutes until it changes its color to pink.
- Now add spices, red chili powder, turmeric powder, salt and cook it for about 2 minutes until to minimize the spices rawness.
- Now add little water and add tomatoes and make a thick gravy. You can cover the pan for 5 minutes to soften the potatoes as it will be easy to make nice blended gravy.
- Now as the gravy formed and oil comes over the pan, add potato slices (aloo ki Katli) and mix it properly so the potatoes equally coated with the gravy.
- Now add 150 ml of water in a pan and cover it for 15-20 minutes on medium heat.
- After 15 minutes, potatoes will be soft and nicely mixed with gravy with the layer of oil over the pan. You can take it out in a platter.
- Garnish with fresh coriander, green chilies and squeezed lemon juice.
- You 'aloo ki katli' or aloo sabzi is ready to serve now.

Expert Tips & Variations
Avoid to cut extremely thin slices of potatoes as it will turn to mushy look after cooking. Never cook the potatoes for long time.
You can serve this recipe as side dish with steamed rice.
Adjust the masala gravy according to your taste. Semi thick gravy makes a perfect taste of potatoes.
You can add different flavor in same recipe by adding different masala like turn it to Achari aloo katli using achari masala or try with tikka masala spice mix.
Starchy potatoes makes a perfect taste of this recipe. If the potatoes are sweet in flavor then flavor will be compromised.

- Use starchy potatoes as it creates good taste in bhujia
- Avoid making thin slices (kalian) of potatoes (aloo) as potatoes will be mash during cooking.
- Best to serve at lunch or dinner.
- If you use cooked mustard oil to make this recipe then it will be more healthy and you will get the old-style bhujia taste that grandma used to make it.
