    About Recipe

    It's a traditional-style Indian Pakistani vegetable pulao recipe with a scrumptious taste and aroma. Pulao or Pilaff is famous in south Asia prepared with steamed rice, spices, stock, and meat or vegetables. It's a veg pulao, locally called 'sabzi pulao' so it will be prepared with sauteed vegetables and rice. It's a perfect rice recipe that you can serve at dinner or lunch as a side or main course.

    Ingredients

    Rice - 2 Cups (Soaked: 15 minutes)Potatoes - 1 Big Size (Cubes)
    Oil - 1 Tbsp
    Green Chilies - 3
    Tomato Cubes - 1 Big size
    Capsicum - 1 Cup
    Carrot - 1 Cup
    Cabbage - 1 Cup
    Yogurt - 2 Tbsp
    Onion Slices - 1 Big Size
    Ginger Garlic Paste - 1 Tsp
    Whole Garam Masala
    Brown Onion
    Chicken Stock - 1 Cup
    Black salt - ½ Tsp
    Salt - To Taste
    Whole Garam Masala
    Bay leaf - 1
    Cumin Seeds - 1 Tsp
    Black Pepper - 25
    Cloves- 5-6
    Whole Red Pepper - 5
    Green Cardamom - 5

    How to Make

    Preparation of Chicken Stock:

    • In a pan, add chicken with bones (4 Pieces)
    • Add, fennel seeds, coriander seeds, garlic cloves, and ginger.
    • Pour 2 cups of Water
    • Cook for about 45 minutes on low medium heat

    Pulao Preparation:

    • In a pan, add oil and heat it up.
    • Once the oil is heated then add whole garam masala and let it pop for a few seconds.
    • Add onion slices and saute until the onion starts changing color.
    • Now add ginger garlic paste.
    • Add tomato cubes and mix well.
    • Now add yogurt and cook on high heat until forms gravy and oil floats on the surface.
    • Add salt according to the taste of vegetables.
    • Add green chilies, potatoes and stir on high heat.
    • Now add carrot and cabbage. Stir on high heat for few seconds.
    • After that, add capsicum and mix all the vegetables.
    • Now add chicken stock and mix all the ingredients.
    • Boil it for 5 minutes on high heat.
    • Now add soaked rice and mix the rice gently through the spoon.
    • Add salt for rice and also add ½ teaspoon of black salt.
    • Cover and initially cook on high heat for about 5 minutes.
    • After 5 minutes, turn the heat to low for 15 minutes.
    • After 15 minutes, sprinkle brown onion to make the pulao more aromatic and delicious.
    • Keep it on dum for about 5 minutes.
    • Now the pulao is ready to serve!

    Serving Idea

    If you are serving as the main course for dinner or lunch then serve with Shami kabab, Raita, and Veg salad.

    You can also serve with chicken karahi, aloo gosht ka salan, or simply with keema curry or kabab. Green chutney will add value to the dish. Must try with it.

    Notes

    Never cook the vegetables for too long otherwise they will be soggy and lose the nutrient value also decolor due to extreme cooking. 
    You can make variations in vegetables in pulao. Spinach, Zucchini, and turnip can be added as per the choice. 
    In the place of chicken stock, you can use homemade vegetable stock. 
    Avoid steaming the rice for a long time otherwise the rice and vegetable will become mushy in texture.
