Here I am preparing the classical version of cream of mushroom soup that is super easy and required handful of ingredients from the pantry to make at home.

How to Make Cream of Mushroom Soup
You only need few ingredients to make this restaurant-style recipe at home. I have used freshly sliced brown mushrooms but you can also use cremini mushrooms or others to make this soup. Cleaned and wash the mushrooms, slice it and saute in butter by adding salt and paprika. As I made it one pot so take out on a plate and prepare the sauce in the same pot.
To prepare the creamy sauce, added butter and oil in a pan, heated it up and added chopped onions and grated garlic and sauteed on medium heat to turn the onions translucent in texture. Then added All purpose flour and mixed well with onion and grated garlic. Cook for few seconds and as the flour starts to change color then added a glass of milk and a cup of fresh cream and mix well. Seasoned with salt, black pepper, ground thyme or rosemary. Cook for few minutes on low medium heat. Key is to stir the soup continuously to avoid sticking on pan bottom and make smooth creamy texture of soup.
Then add sauteed mushrooms in sauce! cook and stir well to blend the creaminess.
Garnish with fresh parsley and serve!
If you want to make this soup without cream then just add milk and thin with Vegetable Stock to avoid extra creaminess.

- Avoid washing mushrooms in water for too long as the mushrooms are like sponges and absorb the water so it will be difficult to take out. Clean it and rinse with water and make sure to use a cotton cloth to dry the water.

Cream of Mushroom Soup
Ingredients
- Brown Mushrooms Freshly Sliced - 1.5 Cups
- Oil - 2 Tsp
- Butter - 2 Tsp
- Salt - ½ Tsp
- Paprika - ½ Tsp
- Oil - 2 Tsp
- Butter - 2 Tsp
- Chopped Onion - 1.5 Tbsp
- Grated Garlic - 1 Tsp
- All Purpose Flour - 1 Tbsp
- Milk - 1 Glass
- Fresh Cream - 1 Cup
- Salt - ½ Tsp
- Black Pepper - ½ Tsp
- Thyme / Rosemary - ½ Tsp optional
- Parsley for garnish
Instructions
- Clean and Wash the Mushrooms.
- Slice the Mushrooms.
- Heat up oil and butter and add sliced mushroom to sauce.
- Season the mushrooms with salt and paprika.
- Saute for few minutes and take it out in a platter to use in sauce.
- Let's prepare the sauce.
- Heat up oil and butter in a pan.
- Add chopped onions and grated garlic.
- Saute for few minutes until the onions become transluscent.
- Now add all purpose flour and quick stir.
- Cook for 1 or 2 minutes on low heat until the flour become aromatic or start changing the color.
- Now add milk on low heat and quick stir.
- Season with salt, black peppers and thyme/rosemary.
- Now add fresh cream in a sauce and quickly stir the sauce on low heat until it shows creamy texture.
- Next is to add sauteed mushrooms and mix well.
- Cover and Cook for 5 to 10 minutes.
- Then it's ready to serve.
- Sprinkle parsley and enjoy!
