Ingredients & Substitutions
Chicken: It's best to use small chicken pieces, boiled shredded chicken, leftover chicken as it perfectly blend with the flavor of tomato sauce and eggs. I love to use thick ground chicken breast.
Eggs: Use any white or brown eggs. Monitor the quantity of eggs to make the thick and think fold of omelette. This recipe is good to serve for 2 people. Increasing the quantity of egg will make the thick layer of omelet which is safe to stuff the chicken without breaking. Check the tips section of this post to get perfect result.
Veggies: Play with different options of veggies that you like. I love to use onion and dill/soya as it makes good combination and aroma. Spinach, broccoli, bell peppers, zucchini, capsicum, asparagus and small dices of potatoes can be used.
Tomato Paste: Used store bought tomato paste.
Cheese: Preferred to use mozzarella, cheddar, feta, parmesan or velveeta. It will add a cheesy flavor that blends so well with eggs and chicken.
Butter: Used salted butter, olive oil or any other vegetable oil can be a substitute.
Seasoning: Simple salt, black peppers and paprika is enough to use.
How To Make a Chicken Omelette
Prepare Chicken Stuffing
1) In a heated pan, pour olive oil and add chicken. Cook on high heat until the chicken changes the color. Keep stirring!
2) Now add salt, black pepper, paprika and tomato paste.
3) Cook it on medium heat and give it a good mix.
4) Cover the pan and cook for 10 minutes on low heat.
5) After, add finely chopped dill/soya and mix it well.
6) Now the chicken is ready to be stuffed in an omelet.
Egg Preparation
7) In a bowl, add 3 eggs. Season with salt and paprika. Beat it well.
8) In a pan, add butter on medium heat. As the butter starts to show bubbles gradually pour the beaten eggs in two batches. Make sure the heat is low otherwise the egg will quickly cook.
9) As the eggs starts to get settle in pan. Gently stir it with spatula and pour the remaining eggs. Let it cook until it makes a firm layer.
With the help of spatula, check the sides of eggs.
10) Place the chicken stuffing in the middle of eggs and cover it with mozzarella cheese.
