Whenever I want to make something quick for my family breakfast or sometimes for teatime then I make these egg rolls that everybody loves and finish in no time. I normally make variations in egg filling to create a new taste. Here in this recipe, I made it a little spicy by adding some local spices.
Normally egg rolls can be made with different wrappers. Normally in the South Asian region, people try roti or paratha. Here I made this roll with crepes which is also a form of roti but in a different way.

Crepe is basically a variation in dosa or roti. You can also call it pancake but with a thin layer. Normally people relate to French pancakes. You can make crepes as a wrapper and fill it with a variety of fillings. You can bake, fry, and simply steam the crepe as per your dish requirement.
Here I am making savory crepes by adding some spices and then giving it an egg layer with cheese before making a perfect roll. It is a simple recipe idea that anybody can try with ease and convenience.

Yes, it's a hot snack recipe but you can also serve it at room temperature if someone doesn't like the hot eating. But don't serve it as a cold snack. If you make it before eating then just microwave it for 30 seconds. You will get the real taste when you have it hot as the cheese is melting.

Crepes making is easy but it's a little bit tricky to make perfect crepes. Normally people don't like it if it's thick and doesn't cook properly. So whenever you make crepes then make sure to follow a few tips that will help you to make perfect crepes that will be tasty, chewy, and healthy as well.
- Properly follow the quantity of the ingredient to make a perfect crepe mixture.
- Rest the mixture at least for 15 minutes to settle the flour.
- When pouring the mixture on pan, make sure the heat is low otherwise it will be burnt and will not cook properly.
- When pouring mixture then spread evenly on the pan to make thin crepes.
- Crepes are delicate so treat it gently.

For Crepe All-Purpose Flour (Maida) | Salt - ½ teaspoon | Red Chilli Powder - 1 teaspoon | Baking Powder - ⅓ teaspoon | Fresh Coriander - Few leaves (Chopped) | Milk - ½ Cup | Vegetable Oil - 1 Tbsp
For Eggs: Eggs - 2 | Salt - ⅓ teaspoon | Black Pepper - ⅓ teaspoon | Onion (Chopped) - 2 teaspoon | Green Chillies - 1 teaspoon | Cheese (crushed) - 1 tablespoon (for 1 Egg roll)
How to Make
Making the crepe egg roll is simple and easy. To make this, first, you have to prepare a crepe mixture then fry it on a regular fry pan. Then prepare eggs by adding spices and vegetables of your choice. As the pancakes are ready, you can make a layer of egg and then fill it with the layer of cheese before making rolls.

Preparation of Crepes: In a bowl, add All-purpose flour (Maida), salt, red chili powder, baking powder, fresh coriander. Mix all the ingredients together through spoon. Now gradually add milk to make a thick paste. Note the consistency of crepe batter in the video. Now add vegetable oil and give it a good whisk. Cover and rest the flour for 15 minutes (minimum time).
Preparation of Eggs: In a separate bowl, add 2 eggs. Also, add salt and black pepper. Add chopped onion and green chilies. Beat the eggs.
Start Making of Egg Rolls: Heat up the pan on low medium heat. Now pour the crepe batter using a big spoon and evenly spread all around the frying pan. Make sure the heat is low otherwise the crepe will be dark in color. Now flip the side carefully. Cook the other side. Brush the butter on the upper side of the crepe. Flip again. Now pour the egg mixture over the crepe. Evenly spread using a spoon. Carefully flip the crepe to cook the egg. Flip again as the egg cooks. Now spread the cheese on top. Cover for 5 minutes to melt the cheese. After 5 minutes, uncover and make a roll. Cut from middle and serve!
